Grass Fed Beef
Good food takes time and preparing the very best quality prime beef for your dinner plate is less of a process and more of an art.
That’s why at 3 Bears Farm we surround ourselves with people who focus on quality over quantity.
If we are going to choose to eat meat, we believe the greatest attention and respect should be given to the welfare of an animal on the farm, during the slaughter process and in the preparation of the various steaks, roasts, sausages and other cuts we all love to eat.
That’s why we’re committed to continuously reviewing and refining the various steps our beef takes from paddock to plate to ensure nothing goes to waste, the animal is respected and the taste is premium.
Animal Selection
We only select the best available animals from the breeds globally renowned for tenderness and flavour. It’s the same quality beef you find in high class Tokyo restaurants and it tastes fantastic!
Wagyu and the lesser known South Devon breeds have a reputation for being highly marbled, so we focus on these genetics. Marbling refers to the visible layers of intramuscular fat which gives this premium beef its tenderness and unique, delicious flavour.
We are committed to processing only the very best animals for our valued customers.
Grass fed, hormone and GM free
This really goes without saying but just for the record all our beef is 100% grass fed, hormone and GM free no exceptions. We wouldn’t feed low quality, artificially altered food to our pets, there’s just no justification for farming that way or feeding it to your family.
Slaughtering
No animal should suffer unnecessary anxiety in their journey to our plates and we are working hard to find a mobile abattoir that can process ‘on farm’. While progress is being made to meet the various compliance requirements in the industry our size and production rate unfortunately prevents us from accessing a suitable service.
For now, our beef is slaughtered at a licensed and well-respected abattoir located a very short 10-minute truck ride from our farm. We ensure our animals are transported at the latest possible opportunity and with the greatest level of care from stock haulers we know and trust to ensure stress is kept to an absolute minimum.
Butchering
There is no question that the skill and artistry of a good butcher is honed over many years and represents the final key component in providing a premium product for our customers.
The journey from apprenticeship to mastery is comparable to any number of other lifetime pursuits.
From the aging of the beef to the sizing of steaks and the well-guarded sausage recipes we choose to work with the best butchers in the state. Individuals who understand the effort and skill involved in raising top quality animals and who are capable of crafting the very best cuts each and every time.
Packing
You’ll receive your order portioned and cryovaced ready to go straight in the fridge/freezer (except for the sausages and mince). Your hamper will be delivered to you chilled in a recyclable box.
Next animal to be processed
South Devon
About this animal …
The next steer is a South Devon. Of interest this animal is of the same genetics as the animal that won the supreme award in 1999, at the first Australian “National Paddock to Palate” beef tasting competition. We expect it to have the same characteristics as our previous offerings with good intra muscular marbling and delicious flavour.
